Experienced Chefs (Sous Chefs and Chef De Parties) and Cooks are required for Townsville’s premier restaurant in northern Queensland specialising in local seafood and aged beef. Suitable person must be trade qualified, must have minimum two years of experience in fast paced a La Carte restaurant serving a full range of dishes for breakfast, lunch & diner plus a bar menu and must be able to work within team environment.

Position: Cooks

Cook Salary  AUD 55,000 -AUD 60,000

Major Duties and Responsibilities:

  • Set up workstations with all needed ingredients and cooking equipment,
  • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.),
  • Prepare full range of foods including breakfast, lunch and dinner plus a bar menu and pizza, and pasta,
  • Cook food in various utensils or grillers,
  • Ensure great presentation by dressing dishes before they are served,
  • Prepares foods to the specifications of the client,
  • Makes adjustments to food items to accommodate guests with allergies or specific diet concerns,
  • Cleans food preparation areas as determined by law and company policy,
  • Acts as liaison to front-of-house employees to ensure proper food service temperature,
  • Seasons food according to recipes or company needs,
  • Orders ingredients and spices as needed,
  • Portions, arranges, and garnishes food based on client preference,
  • Assists other cooks during the food assembly process,
  • Devises new recipes,
  • Estimates expected food consumption and organises preparation,
  • Communicates with owner about how to improve meal service
  • Liaise and work with the head Chef and is expected to assist him to ensure safe and efficient production of food, while maintaining all statutory requirements.

Position: Chefs – Sous Chef and Chef De Partie

Chef De Partie Salary AUD 60,000 -AUD 65,000

Sous Chef Salary AUD 65,000 -AUD 75,000

Major Duties and Responsibilities: 

  • Prepare full range of foods including breakfast, lunch and dinner plus a bar menu and pizza, and pasta,
  • Ensure the production of all food is prepared according to a 5-star standard,
  • Prepare, serve and store food items in regards to the requirements of the Watermark Kitchen,
  • Ensure all Watermark policies and procedures, health and hygiene requirements are adhered to,
  • Establish and maintain effective employee working relationships with all members in the Kitchen,
  • Excellent communication and organisational skills with a proactive approach to system improvements,
  • Maintain excellent presentation standards,
  • Check function sheets and daily menus and initiate requisitions of all foodstuffs and dry goods based on functions, climate, menus and forecast
  • Ordering stock in the absence of the Head Chef,
  • Be innovative and creative and keep up to date with current trends,
  • The ability to work a 7-day rotating roster including weekends and evenings.
  • A willingness to work split shifts;
  • Ability to work well with others and do what’s required to ensure smooth operations at Watermark Kitchen;
  • Capacity to work across breakfast, lunch and dinner shifts, including on weekends;
  • Liaise, supervise and work with cooks and to assist them to ensure safe and efficient production of food, while maintaining all statutory requirements.
  • To behave in a manner appropriate to your standing within the business.

Qualifications

Certificate 111/1V in Hospitality (Commercial Cookery) or equivalent is a minimum requirement. At least three years of relevant experience may substitute for the formal qualifications listed above.

Main Skills and Experience

  • Excellent communication skills and ability to multi-task.
  • Ability to work effectively and efficiently in a team environment.
  • Minimum of 3 years of experience as a cook or chef.
  • Experience in similar role.

We are offering FULL TIME position with salary level to suit your skills and experience ($55,000 – $75,000 plus super), 5 days roster with 2 days off each week. Rotating roster with a mix of breakfast, lunch & diner shifts.
